Ingredients

Potato and Egg Taco from Taco Palenque features Mexican style chorizo, scrambled eggs, and crispy diced potatoes as its main ingredients. Besides these two ingredients the dish also features a few other ingredients that you need to arrange during the time of preparation of this dish at home.

  • 1 pound rosette potatoes
  • 1 can of refried beans
  • ½ pound chorizo
  • ½ medium white onion
  • 1 bunch of spring onions
  • Salsa Verde
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Ranchera Sauce
  • Corn tortilla chips

 

Method of Preparation

  1. To begin with this recipe, first you need to remove the outer membrane from the chorizo.
  2. Then peel the potatoes. Chop the potatoes into ¼" pieces. Now finely chop the onion.
  3. Switch on the gas stove and place a pan over it. And then heat 4 tablespoons of cooking oil in the pan over medium-high heat. Add the chopped potatoes to the pan and stir occasionally to coat the potatoes with oil.
  4. Season the potatoes the salt and pepper and stir again. Cook the potatoes for about 3 minutes and then add the chopped white onion to it. Cook the onions and potatoes together for 5 minutes or until they become golden brown.
  5. Add the chorizo to it and stir to coat well with the onion mixture. You have to cook the potato, onion chorizo mixture for about 10 minutes. Drain the excess grease and adjust the salt if it is required.
  6. Turn on the gas stove and place a skillet on medium low flame and add butter to the skillet. Allow the oil to heat up for about 2 min. Then turn the pan to low flame. Beat the eggs with water vigorously until it becomes smooth. Let the water evaporate and the eggs to turn out fluffy without adding any milk.
  7. Now add the beaten eggs to the skillet, and gently move the eggs around the pan with a spatula. When the eggs start to firm up, turn off the heat, and leave them in the skillet to keep warm until you are ready to serve.
  8. Cook refried beans in a skillet and season with salt and pepper to it.
  9. To serve the recipe, add scrambled eggs, chorizo and potato mixture, and add a spoonful of refried beans, and Ranchera sauce to a plate. Dip 2-3 corn tortilla chips in the ranchera sauce and serve hot to enjoy.

Breakfast/Lunch/Dinner Great at Taco Palenque

Everything I've ordered at Taco Palenque has been delicious!!!!

From breakfast tacos, fajita plate, burritos, to sauces, everything is just so good.

Besides the food, the people who work there are always so courteous, helpful, and friendly.

I will continue to frequent this restaurant with family and friends.

Two can eat fine for $11.99

This has become our favourite place for a quick lunch. We each order tacos. Sirloin for me and chicken for my wife with extra tortillas and grilled onions(free) plus two drinks. As well you have access to unlimited chips and a variety of condiments from the sauce bar. You can't go wrong.

Breakfast Tacos are great

I regularly visit this place for breakfast & lunch tacos for the family. Today we ordered a variety of breakfast tacos including potato & egg, bacon & egg, chorizo & egg and chorizo and potato . I love their salsa and the variety of it. This place is a little overpriced when it comes to PARILLADAS but I still buy them at times because they are just delicious . Highly recommended!
