Pollo Asada Quesadilla from Chronic Taco includes marinated and grilled chicken as its main ingredient. Besides this, the dish also features a few other ingredients that you need to keep handy during the preparation.

 

  • ¼ cup extra-virgin olive oil
  • ¼ cup fresh orange juice
  • Juice of 1 lemon
  • Juice of 1 lime
  • 2 garlic cloves, smashed
  • 1 tsp. kosher salt
  • 1 tsp. black pepper
  • 2 lb. skinless, boneless chicken thighs
  • 1 large onion, quartered
  • 12 to 14 small flour tortillas, warmed
  • Pico de gallo, sour cream and fresh cilantro, for topping
  • Lime wedges, for serving

 

 

Method of Preparation

 

  1. To begin with the recipe, first whisk the olive oil, orange juice, lemon juice, lime juice, garlic, salt and pepper in a large bowl. Add the chicken thighs and onion in a large resealable plastic bag and pour in the marinade, toss well so that the marinade combines the chicken properly.
  2. Seal the bag and refrigerate the chicken for at least 1 hour and up to 4 hours.
  3. Place a rack in the top of the oven and preheat to 450˚. Line a baking sheet with foil. Place the chicken, onion and marinade onto the prepared pan and bake for about 15 minutes. 
  4. Turn the oven to broil and cook until the chicken becomes golden brown and cooked through, which will take you about 5 to 10 more minutes. Let the chicken rest for about 5 minutes. Now your chicken is ready.
  5. Now, slice the chicken and toss with the onion and pan juices. 
  6. To serve the quesadilla, place the chicken on the tortilla and top with pico de gallo, sour cream and cilantro. Fold the tortilla in half and press slightly to give it the shape of the quesadilla. Heat oil in a skillet and place the quesadilla on it. Flip it when one side is done. Then cook the other side for about 1- 2 minutes. Serve hot and fresh to enjoy the dish.

I was really excited to try this place out.. but was very disappointed. I asked for a carne asada quesadilla with no onions JUST cilantro. When I got home I was surprised with a quesadilla WITH onions and NO MEAT. A quesadilla with cilantro and onions, All bad.

Having Mexican like foods in Hawai'i has come a long way from not having any. I'm thankful for any Mexican food like restaurants and Mexican restaurants that open on the Aina. With that said, I appreciate Chronic Taco making their first foundation on O'ahu. Chronic Taco's from what I've gathered is a California based chain. I've never tried them when I was living back in San Diego because I love mom and pop shops so much better. However I can honestly say Chronic Taco's is fairly similar to Chipotles style and I actually like them enough to keep coming back. Here are my thoughts... Chronic Taco's (CT's) is located in Kapahalu within the Safeway shopping center along with a few other eateries. Parking is free and available above Safeway or in front of CT's brick and mortar. Order to sit inside, outdoors or to go. The shop is well kept and clean. Customer service has always been good here and the people are fun to talk to. Remember this is similar to Chipotle's and Subway's set up. It's a build your own type menu with a plethora of baja style options to apply to any chosen protein. This is also helpful for anyone with restricted diets. Specialty items like potato taco's, fries, and nachos and Cali Burrito's and baja style options are available. My go to whenever I need some comfort food is the small burrito with freshly beer battered fish, or the baja style shrimp and beef taco's in corn tortilla and it's spicy! I like it! The sauces are delicious and the guac is real not cheap from the mix. The small burrito is perfect for me because the regular size is humongous. How to Order 1) Pick your Base-taco/burrito-small or large, bowl-rito (without flour tortilla or corn shell), tostada, salad, quesadilla, torta 2) Choose from a variety of proteins- Pollo, carnitas, al pastor, carne asada, fish or shrimp (beer battered or broiled), vegetarian 3) Pick your carbs (beans, rice, spanish rice) 4) Veggies 5) Sauces (the guac is made fresh guys! But cost extra) **Check in via the Yelp app and score free Churro Bites** It's a great place for breakfast lunch and dinner. I've not tried their breakfast menu yet.
