  • 6 thin slices of ham
  • Salt 
  • Pepper powder
  • 2 green onions
  • 6 eggs
  • Butter
  • Cooking oil spray
  • Corn tortilla chips


For Salsa Ranchera

  • 1 pound tomatoes
  • 2-3 jalapeno peppers (or serrano peppers if you want a hotter version)
  • ½ large white or yellow onion
  • 4 garlic cloves
  • 3 tablespoons cilantro
  • Salt to taste


Method of Preparation

Salsa Ranchera

  1. To prepare Salsa Ranchera, slice the tomatoes and jalapenos in half lengthwise and set them onto a cast iron pan or baking sheet, keeping the skin sides up. Then add the onion and garlic cloves to the pan.
  2. Now you need to keep the pan into the center of the oven and broil for about 20 minutes, or until the skins of the tomatoes and peppers blister up. Make sure tomatoes and jalapenos do not burn.
  3. Remove from heat and let it cool slightly. 
  4. Now remove the skins from the tomatoes, peppers and garlic. Blend the tomatoes, peppers, garlic and onion in a food processor along with cilantro and salt. Blend until the paste becomes smooth.
  5. Season with salt to taste and the salsa is ready.

Ham and Egg Breakfast plate

  1. To begin with the recipe, place a skillet on the gas stove and add oil to it. Add ham and start cooking till it becomes golden brown. Now add onions to it and sauté for a minute. Then cook the ham for another few minutes. Then season the ham with salt and pepper and simmer for a few minutes. When ham is done, switch off the gas stove and set aside.
  2. To prepare scrambled eggs, place a skillet on the gas stove on medium low flame and add butter to the skillet. Allow the oil to heat up for about 2 min. Then turn the pan to low flame. Beat the eggs with water vigorously until it becomes smooth. Let the water evaporate and the eggs turn out fluffy without adding any milk.
  3. Now add the beaten eggs to the skillet, and gently move the eggs around the pan with a spatula. When the eggs start to firm up, turn off the heat, and leave them in the skillet to keep warm until you are ready to serve.
  4. To serve the dish, take a plate and add a spoonful of scrambled eggs to it. Add seasoned ham to the plate. Add ranchera sauce and dip 2-3 corn tortilla chips in it. Enjoy the dish hot and fresh.

This Place is Going to Make Me Fat

Love this place! I would eat here every day of the week, and twice on Sundays if I could. The food is amazing and the service is great. I just discovered that they sell frozen margaritas by the pitcher as well, which has officially made it my favorite place to eat in Laredo. Ten stars!

I was not expecting to enjoy their tacos, yet they were full of flavor and the guacamole was actually real avocados!!! I really enjoyed stopping here for lunch.

Just eat here!

This place served up the best Mexican food I have ever had. The steak on the scrumptious pirata taco was so tender and juicy I was just right, cooked medium rare and tasted just like I had just remedied the steak from the grill myself. A real treat to eat here on my trip also exposed me to refreshing beverages here too. Try the Horchata and the Jamaica! Be prepared to get goosebumps while eating here. The food is that good!
