- 1 tablespoon olive oil
- 1 lb chicken breast
- 16 oz bag tortilla chips
- 15 oz can refried beans
- 1 1/2 cups grated cheese
- 2 carrots grated
- 4 oz can black olives
- 1 cup salsa
- 1 cup chopped lettuce
Method of Preparation
- To begin with the recipe, preheat the oven to 350 degrees.
- Add some oil to the chicken and sprinkle the chicken with some with salt and pepper. Now, grill the chicken on the stovetop griddle over medium high heat, which will take you about 5 minutes per side. However, timing may vary according to the thickness of chicken.
- When the chicken is cooked through and reaches an internal temperature of 165 degrees, set aside the cooked chicken to cool a bit. And then shred it with two forks.
- In 2 large 9 x 13 oven-safe dishes, place the tortilla chips between the two pans. Top the chips with the chicken. Add dollops of refried beans and sprinkle with cheese.
- Then cover the baking dishes with foil and bake for 15 minutes, or until the cheese gets melted. Remove the foil and bake for another 2 minutes.
- When the tortilla chips and chicken mixture are baking, you can prepare the remaining toppings.
- When the cheese melts on the tortilla chips, you can take them out of the oven. Now, you can top the chips with the carrots, olives, salsa, and lettuce.
- Serve fresh to enjoy.

I have enjoyed Taco Villa for years! The meat burritos are delicious and very large compared to the other taco joint in town. I have never been disappointed. If you want fast food that is different from the usual hamburger or chicken, Taco Villa is the place to go.

I submitted the below to Taco Villa Corporate weeks ago, actually twice, to this date I still do not have a refund, nor has anyone contacted me ..this is simple theft....Beware the garbage !
Today at about 11:20 I visited the Taco Villa in Amarillo on coulter ..... I am requesting a refund ticket below, as I looked at my Nacho Deluxe “ scrambled garbage” and simply left it on the counter, almost in tears and left.
I felt no reason to argue about it as the process had already been through much conversation. I would like to state the cashier was nice and did try.
I never received the coffee I think my request for fresh was an inconvenience to them...
Please mail the refund to me, a coupon for the amount is not an option, I don’t plan to return. Ticket says to go, but it was an in house request....the cashier was nice enough to give me a tray......for what others threw at me...

This place (the whole chain) is a local favorite, but I have no idea why. My friends told me "Take it for what it is, don't compare it to real Mexican food", so I tried it with an open mind. Didn't help.
The "famous" Guadalajara is a toasted tortilla spread with some avocado paste, covered with a lot of shredded lettuce, a paper thin tomato slice, and some shredded cheese that isn't even melted (the whole thing is cold, so maybe the cheese isn't supposed to be melted). There is so much shredded lettuce relative to everything else, that lettuce is the primary flavor. Not very interesting.
The taco is a little bit of "meat" (I guess it really was ground beef) in a taco shell with shredded cheese. The filling was so lukewarm (and tacos really are supposed to be hot) that the cheese wasn't even a little bit melty. Also flavorless. I know I wasn't supposed to be expecting authentic Mexican, but there should have been a hint of chili or cumin or something. Adding the spicy sauce (lots of it) didn't help because the sauce didn't have any flavor either.
Why this place is so popular is a mystery to me. Like the taco filling.
