  • 2 tablespoons diced tomatoes
  • 1 tablespoon finely chopped cilantro
  • 1 tablespoon cotija cheese, crumbled
  • 1/4 avocado, sliced
  • salt and pepper
  • hot sauce

Method of Preparation

  1. To prepare this recipe, first heat the oil in a small skillet over low- medium heat. Add the tortilla to the oil and cook for 30 seconds on each side or until it becomes slightly crispy. You can use tongs to remove the tortilla to a paper towel to drain any excess oil.
  2. In the same pan, add a little oil and crack one egg. Fry the egg until it's cooked as per your choice.
  3. Cut the sausages and cook in oil until you get your desired flavour. Season it with salt and pepper. Drain excess oil and keep aside. 
  4. To assemble the huevos rancheros, place the tortilla to a plate, add with black beans and the fried egg.
  5. Add sausages to the burrito.
  6. Add the diced tomato, cilantro and cotija cheese on top.
  7. Then slice the avocado and add a couple slices to the plate.
  8. Finally season it with salt and pepper and add a dash of hot sauce. Fold it into the shape of a burrito.
  9. Serve hot and fresh.

Review: Del Taco - Huevos Rancheros Epic Burrito

Del Taco's Huevos Rancheros Epic Burrito weighs in and over a pound and consists of grilled chorizo sausage, scrambled eggs, pinto beans, roasted chile salsa, sliced avocado, grated cheddar cheese, and sour cream, double-wrapped in two warm corn tortillas as well as an oversized, warm flour tortilla.


The breakfast burrito normally goes for $4.99 but I received this one courtesy of Del Taco.


The very hefty burrito was fairly tightly packed with a good amount of fluffy egg as well as chorizo sausage, which added more of a Mexican spiced profile compared to regular fast food breakfast sausage.

The salsa and the sour cream offered a tanginess to the burrito that was blunted by the rich butteriness of the avocado and the earthiness of the soft beans, as well as by the eggs and tortillas.


There was a core of shredded melted cheddar in the middle but it was fairly thin and I found myself wishing for a lot more of it.


The corn tortillas didn't contribute much and I only noticed the extra flavor occasionally. Mostly it just felt like there was too much tortilla going around.

When it comes down to it, the Del Taco Huevos Rancheros Epic Burrito makes for a nice breakfast burrito, especially if you have a big appetite (or like to save some of it for later). The chorizo sausage and avocado stood out for me but are also available in Del Taco's other breakfast offerings. The corn tortillas didn't really work for me.

The Epic Scrambler is a nice change of pace for a breakfast burrito. Boring are the mainstay sausage and egg burritos. The Scrambler nicely blends chorizo and egg plus pico de gallo salsa, cheese, red sauce and hashbrown sticks in a tortilla making for a good tasting burrito

Del Taco Restaurants Inc. has revamped its breakfast menu with the introduction of Mexican Chorizo Sausage, grilled in each restaurant's working kitchen until golden brown and juicy. The brand offers a flavourful protein option in three brand new breakfast items that includes the Chorizo Breakfast Taco (only $1 on the Buck & Under Menu at Breakfast), the Chorizo Half Pounder Burrito, and the Epic Chorizo Scrambler Burrito. The dishes feature ground pork seasoned with a slightly spicy blend of special herbs and spices.
