Enchiladas Callejeras from Taco Palenque features Beef stuffed taco rolls and enchilada sauce as its two main ingredients. However, the dish also takes a few ingredients that you need to keep handy during the preparation of this dish at home.

  • 1 lb ground beef
  • 2 red bell peppers
  • 2 poblano peppers
  • ½ onion
  • 1 can refried beans
  • 1 can enchilada sauce
  • 2 tbsp taco seasoning
  • 1 avocado
  • 1 lime
  • Grated cheddar cheese
  • Corn tortillas
  • Fried carrots


Method of Preparation

  1. To begin with the recipe, first set the broiler to High and move a rack close to the top of the oven. Put the poblano peppers and bell peppers on a sheet pan and place them under the broiler for about 4-5 minutes per side. As the peppers start to blacken, rotate them until each side is evenly roasted. Keep an eye on them and use a timer so you don't forget.
  2. After the peppers become evenly roasted, place them in a large bowl and cover with plastic wrap. Keep them aside for 15 minutes.
  3. Meanwhile, brown the ground beef. After the meat is evenly browned and properly cooked, add taco seasoning and ¾ cup water. Let it simmer on low flame for 15 minutes.
  4. Then cut the onion into strips and saute with a little vegetable oil. Then keep it aside.
  5. Heat up the refried beans so they are easier to spread.
  6. To assemble the plate, warm the tortillas and stuff it with prepared meat, sauteed onion, and cheese and then roll them up. Make three tortilla rolls like this. to 375F.
  7. In a plate, keep the prepared bell peppers and poblano peppers. Then, put three rolled tacos, refried beans and dip corn tortilla chips in it. Add fried carrots on the plate. Pour enchilada sauce over the tacos and bake at 375 for 20 minutes or until the cheese inside the tacos starts to melt.
  8. After you are done with the dish, let cool for a few minutes before serving. You can top with diced avocado, lime, and cilantro.

I was on a business trip to McAllen and noticed there were Taco Palenque restaurants everywhere! So I decided to pop in and ordered the Enchiladas Verdes for dinner one night.

Oh my goodness it was delicious! My food wasn't as hot as I would like but it was still pretty tasty. I love the salsa/salad bar! It was definitely my favourite part.

The service was great and the food came fairly quick. The only thing I would say is that my friend and I got quite a few stares. Yes, we were from out of town so we definitely stuck out like a sore thumb. But the stares from the TP staff and the customers were definitely very uncomfortable.

I would definitely go again if ever I'm in McAllen, but I'll just stick to take out next time!

In need of some late night food after visiting some friends. One option we found was Taco Palenque. I'm not from around here and I've never heard of them, but hey, they're open and I'm hungry. We ended up ordering a couple Super Papas, a Sirloin burrito and a few tacos.

The Super Papas is a cross between Carne Asada fries and a baked potato. The Super Papas came with a huge baked potato. Which was buttery and tender. Toppings included a good amount of cheese, bacon, sour cream, green onions and carne Asada. Or I guess they call it "Papa Asada" here. The meal also came with a bag of chips and some salsa. And their salsa is spicy! I did like this spin on a baked potato/carne Asada fries. The tenderness of the huge potato really made this dish.

The Sirloin Burrito was your standard burrito. Nothing to write home about. On the smaller side from what I'm used to seeing in San Diego. It was ok. My friend had the tacos and he said they were pretty good.

Overall, I liked that the restaurant looked clean. The service was great. And the food was very satisfying. I would come back and try some other items.
