Chorizo and Egg breakfast plate from Taco Palenque features Mexican style chorizo and scrambled eggs as its two main ingredients. Besides these two ingredients the dish also features a few other ingredients that you need to arrange during the time of preparation of this dish at home.

  • 1 can of Refried beans
  • 3 eggs
  • butter
  • ½ pound chorizo
  • ½ medium white onion
  • 1 bunch of spring onions
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Oil for cooking
  • Corn tortilla chips


For Salsa Ranchera

  • 1 pound tomatoes
  • 2-3 jalapeno peppers (or serrano peppers if you want a hotter version)
  • ½ large white or yellow onion
  • 4 garlic cloves
  • 3 tablespoons cilantro
  • Salt to taste

Method of Preparation

Salsa Ranchera

  1. To prepare Salsa Ranchera, slice the tomatoes and jalapenos in half lengthwise and set them onto a cast iron pan or baking sheet, keeping the skin sides up. Then add the onion and garlic cloves to the pan.
  2. Now you need to keep the pan into the center of the oven and broil for about 20 minutes, or until the skins of the tomatoes and peppers blister up. Make sure tomatoes and jalapenos do not burn.
  3. Remove from heat and let it cool slightly. 
  4. Now remove the skins from the tomatoes, peppers and garlic. Blend the tomatoes, peppers, garlic and onion in a food processor along with cilantro and salt. Blend until the paste becomes smooth.
  5. Season with salt to taste and the salsa is ready.

Chorizo and Egg preparation

  1. To begin with this recipe, first you need to remove the outer membrane from the chorizo.
  2. Then finely chop the onion. Switch on the gas stove and place a pan over it. And then heat 4 tablespoons of cooking oil in the pan over medium-high heat. Add the onions to the pan.
  3. Add the chorizo to it and stir to coat well with the onion mixture. You have to cook onion chorizo mixture for about 10 minutes. Drain the excess grease and adjust the salt if it is required.
  4. To prepare scrambled eggs, place a skillet on the gas stove on medium low flame and add butter to the skillet. Allow the oil to heat up for about 2 min. Then turn the pan to low flame. Beat the eggs with water vigorously until it becomes smooth. Let the water evaporate and the eggs to turn out fluffy without adding any milk.
  5. Now add the beaten eggs to the skillet, and gently move the eggs around the pan with a spatula. When the eggs start to firm up, turn off the heat, and leave them in the skillet to keep warm until you are ready to serve.
  6. To serve the dish, place a spoonful of chorizo on a plate and add scrambled eggs also. Then add salsa ranchera sauce and dip 2-3 corn tortilla chips in the sauce. Enjoy the dish hot and fresh.

I called in a botana for 4 order and picked up curbside. My ordering and pickup experience were great. The employees were very friendly and helpful.  All of the sides and salsas were in my order with nothing missing. I like that they use real avocados as opposed to the bagged guacamole. Their corn tortillas are not my favorite but they get the job done.  I definitely recommend.

These strange COVID times are impacting us all, but until Taco P can get it's act together for to-go and pickup orders, you're best off heading elsewhere for your taco fix. Wrong orders, comically long wait times, and a disconnected phone like make for a really poor experience. I'll happily remove this update once their dining room is reopened but until then steer clear.
